Mix together:
3 tbsp olive oil
1 tbsp lemon juice or apple cider vinegar
1 tsp mild mustard

How to recognize a good olive oil
A quality extra virgin olive oil has a fresh, green and lively aroma.
On the palate, it may be fruity, slightly bitter and gently peppery at the back of the throat.
When kept cool, it may also turn cloudy, thicken slightly or form small natural flakes at the bottom of the bottle.
This is not a defect. It is a natural reaction to cold, and a small sign of a living, minimally processed oil.
Polyphenols & Cholesterol : extra virgin olive oil contains polyphenols, valuable natural compounds found in the olive fruit.
